After an incident with my oven, I am here to share with you another Sweet & Savory recipe from Mimi’s stash.
Peanut Butter Cookies
1 Cup shortening
1 Cup sugar
1 Cup brown sugar
1 t vanilla
2 eggs and beat well
1 Cup peanut butter
3 Cups flour
2 t baking soda
dash of salt
Form into balls, with back of a fork, make criss-cross
Bake at 350º for 10 minutes
Don’t over mix! It can be easy to do, so I would cream the shortening and sugars, then the eggs with the mixer and then stir in the already mixed up flour/soda/salt mixture in with a spatula! My dough got dried out too much and they are crumbly.
These are a quick and easy cookie recipe! I haven’t tried it with almond butter, but one could certainly try, or sun butter for nut allergies!

How are you all doing during this continued time of distancing?
Schools are now going to be at home learning without returning to the classroom until the fall. This has been sad in many ways and yet I’m glad there is a decision so we can just do life and move on with it until a new school year.
